Main Ingredients
- 1 unit red bell pepper, sliced
- 1 unit yellow bell pepper, sliced
- 1 unit zucchini, sliced
- 1 unit red onion, sliced
- 2 tablespoon olive oil
- Salt and pepper to taste
- 1 tablespoon balsamic vinegar
- 1 cup cherry tomatoes, halved
- 2 cups mixed greens
Preheat grill to medium-high heat.
Toss bell peppers, zucchini, and onion with olive oil, salt, and pepper.
Grill vegetables for 5-7 minutes per side until tender and charred.
Remove from grill and let cool slightly.
In a large bowl, combine grilled vegetables, cherry tomatoes, and mixed greens.
Drizzle with balsamic vinegar and toss to combine.
