Ingredients 

Main Ingredients

  • 1 unit red bell pepper, sliced
  • 1 unit yellow bell pepper, sliced
  • 1 unit zucchini, sliced
  • 1 unit red onion, sliced
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 1 cup cherry tomatoes, halved
  • 2 cups mixed greens

Instructions 

  1. Preheat grill to medium-high heat.
  2. Toss bell peppers, zucchini, and onion with olive oil, salt, and pepper.
  3. Grill vegetables for 5-7 minutes per side until tender and charred.
  4. Remove from grill and let cool slightly.
  5. In a large bowl, combine grilled vegetables, cherry tomatoes, and mixed greens.
  6. Drizzle with balsamic vinegar and toss to combine.
