Grilled Vegetable Sandwich
A delicious and healthy vegan sandwich packed with grilled vegetables.

Main Ingredients
- 1 medium Zucchini sliced
- 1 medium Red Bell Pepper sliced
- 1 small Red Onion sliced
- 2 tablespoon Olive Oil
- 1 pinch Salt to taste
- 1 pinch Black Pepper to taste
- 4 slices Whole Grain Bread toasted
- 2 tablespoon Hummus
1. Preheat the grill pan over medium heat.
2. Toss the sliced zucchini, red bell pepper, and red onion with olive oil, salt, and black pepper.
3. Grill the vegetables for about 5-7 minutes on each side until tender and slightly charred.
4. Toast the whole grain bread slices.
5. Spread hummus on each slice of toasted bread.
6. Assemble the sandwich by layering the grilled vegetables between the hummus-spread bread slices.
7. Serve immediately and enjoy!
