Ingredients 

Main Ingredients

  • 1 large zucchini sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red onion sliced
  • 2 cups cherry tomatoes halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 whole wheat pita breads
  • 1 cup hummus
  • ¼ cup fresh basil chopped

Instructions 

  1. Preheat grill to medium-high heat.
  2. Toss zucchini, bell peppers, onion, and tomatoes with olive oil, salt, and pepper.
  3. Grill vegetables for 5-7 minutes, until tender and slightly charred.
  4. Spread hummus on pita breads.
  5. Top with grilled vegetables and fresh basil.
  6. Serve immediately.
