Ingredients

  • 2 cups Bell Peppers, sliced
  • 1 cup Zucchini, sliced
  • 1 cup Red Onion, sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 8 pieces Corn Tortillas
  • to taste Salt and Pepper

Instructions 

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, toss the bell peppers, zucchini, and red onion with olive oil, cumin, paprika, salt, and pepper.
  3. Grill the vegetables for about 10 minutes, turning occasionally, until they are tender and slightly charred.
  4. Warm the corn tortillas on the grill for about 1 minute on each side.
  5. Assemble the tacos by placing the grilled vegetables onto the tortillas. Serve immediately.
