Ingredients 

Veggies

  • 2 cups Bell peppers, sliced
  • 1 cup Zucchini, sliced
  • 1 cup Red onion, sliced

Avocado Crema

  • 1 Avocado, ripe
  • ¼ cup Cilantro, chopped
  • 1 tablespoon Lime juice
  • ¼ cup Water
  • to taste Salt

Tacos

  • 8 Taco shells

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Grill the bell peppers, zucchini, and red onion until tender and slightly charred, about 5-7 minutes.
  3. 3. In a blender, combine the avocado, cilantro, lime juice, water, and salt. Blend until smooth.
  4. 4. Warm the taco shells on the grill for about 1 minute.
  5. 5. Assemble the tacos by filling the shells with grilled veggies and topping with avocado crema.
