Ingredients 

Main Ingredients

  • 2 cups Mixed Vegetables (bell peppers, zucchini, onions) chopped
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 8 pieces Taco Shells

Mango Salsa

  • 1 cup Mango diced
  • ½ cup Red Onion finely chopped
  • 1 piece Jalapeño seeded and minced
  • ¼ cup Cilantro chopped
  • 1 tablespoon Lime Juice freshly squeezed
  • ½ teaspoon Salt

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. In a mixing bowl, toss the mixed vegetables with olive oil, cumin, and paprika.
  3. 3. Grill the vegetables for about 10 minutes, until tender and slightly charred.
  4. 4. While the vegetables are grilling, prepare the mango salsa by combining mango, red onion, jalapeño, cilantro, lime juice, and salt in a bowl.
  5. 5. Warm the taco shells on the grill for about 1 minute on each side.
  6. 6. Assemble the tacos by filling each shell with grilled vegetables and topping with mango salsa.
