Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Carrots, sliced
  • 1 cup Celery, sliced
  • 1 cup Zucchini, diced
  • 1 cup Green Beans, chopped
  • 1 cup Frozen Peas
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 cup Plant-Based Ground Beef
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until onion is translucent.
  3. Add carrots, celery, zucchini, and green beans. Cook for about 5 minutes.
  4. Add diced tomatoes, vegetable broth, plant-based ground beef, thyme, basil, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add frozen peas and cook for another 5 minutes.
  7. Serve hot and enjoy!
