Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until onion is translucent.
Add carrots, celery, zucchini, and green beans. Cook for about 5 minutes.
Add diced tomatoes, vegetable broth, plant-based ground beef, thyme, basil, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Add frozen peas and cook for another 5 minutes.
Serve hot and enjoy!
