Ingredients 

Main Ingredients

  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 cup Diced Onion
  • 3 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 2 cups Cooked White Beans
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add diced carrots, celery, and onion. Cook until softened, about 5 minutes.
  2. 2. Add minced garlic and cook for another minute.
  3. 3. Pour in the vegetable broth and bring to a boil.
  4. 4. Add the cooked white beans, dried thyme, dried oregano, salt, and black pepper. Reduce heat and simmer for 30 minutes.
  5. 5. Adjust seasoning to taste and serve hot.
