Ingredients 

Soup Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 4 cups Potatoes, peeled and diced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Vegan Ham, diced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Pour in the vegetable broth, then add the diced potatoes, carrots, and celery. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes, or until the vegetables are tender.
  6. Add the diced vegan ham, salt, and black pepper. Stir well and cook for another 5 minutes.
  7. Serve hot and enjoy!
