Instructions
Heat the olive oil in a large pot over medium heat.
Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Pour in the vegetable broth, then add the diced potatoes, carrots, and celery. Bring to a boil.
Reduce heat and let simmer for 20 minutes, or until the vegetables are tender.
Add the diced vegan ham, salt, and black pepper. Stir well and cook for another 5 minutes.
Serve hot and enjoy!
