Ham and Split Pea Soup Recipe

- 1 cup split peas rinsed
- 1 large onion chopped
- 2 cloves garlic minced
- 2 medium carrots chopped
- 2 stalks celery chopped
- 1 tablespoon olive oil
- 6 cups vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
3. Stir in the split peas, vegetable broth, smoked paprika, thyme, salt, and pepper.
4. Bring to a boil, then reduce the heat and simmer for about 1 hour, or until the peas are tender.
5. Use an immersion blender to blend the soup to your desired consistency, or leave it chunky.
6. Adjust seasoning to taste and serve hot.
