Ingredients

  • 1 cup split peas rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 1 tablespoon olive oil
  • 6 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
  3. 3. Stir in the split peas, vegetable broth, smoked paprika, thyme, salt, and pepper.
  4. 4. Bring to a boil, then reduce the heat and simmer for about 1 hour, or until the peas are tender.
  5. 5. Use an immersion blender to blend the soup to your desired consistency, or leave it chunky.
  6. 6. Adjust seasoning to taste and serve hot.
