1. In a mixing bowl, combine TVP and vegetable broth. Let it sit for 10 minutes to rehydrate.
2. Add chopped onion, garlic, breadcrumbs, soy sauce, thyme, and sage to the TVP mixture. Mix well.
3. Form the mixture into patties.
4. Heat olive oil in a skillet over medium heat. Cook the patties until browned on both sides, about 4-5 minutes per side. Remove from skillet and set aside.
5. In the same skillet, add olive oil and sliced onions. Cook until onions are soft and caramelized.
6. Sprinkle flour over the onions and stir well. Gradually add vegetable broth and soy sauce, stirring constantly until the gravy thickens.
7. Return the patties to the skillet and spoon gravy over them. Simmer for a few minutes until heated through.
