Main Ingredients
- 4 cups Mixed greens
- 1 cup Roasted butternut squash cubed
- ½ cup Dried cranberries
- ½ cup Pecans chopped
- 1 whole Apple sliced
- ¼ cup Red onion thinly sliced
Dressing
- 3 tablespoon Olive oil
- 2 tablespoon Balsamic vinegar
- 1 tablespoon Maple syrup
- 1 teaspoon Dijon mustard
- to taste Salt and pepper
1. In a large mixing bowl, combine the mixed greens, roasted butternut squash, dried cranberries, chopped pecans, sliced apple, and thinly sliced red onion.
2. In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper to make the dressing.
3. Pour the dressing over the salad and toss to combine.
4. Serve immediately and enjoy!
