Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 can kidney beans, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 cup pasta (small shapes)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 2 cups spinach, roughly chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onion and garlic, sauté until translucent.
  3. 3. Add carrots, celery, and zucchini, cook for 5 minutes.
  4. 4. Stir in diced tomatoes and vegetable broth, bring to a boil.
  5. 5. Add beans, pasta, oregano, and basil. Reduce heat and simmer for 15 minutes.
  6. 6. Season with salt and pepper to taste.
  7. 7. Stir in spinach and cook until wilted, about 2 minutes.
  8. 8. Serve hot and enjoy!
