carrots, diced

celery stalks, diced

zucchini

diced tomatoes

vegetable broth

kidney beans, drained and rinsed

cannellini beans, drained and rinsed

pasta (small shapes)

teaspoon
dried oregano

teaspoon
dried basil
to taste
salt and pepper

spinach, roughly chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until translucent.
3. Add carrots, celery, and zucchini, cook for 5 minutes.
4. Stir in diced tomatoes and vegetable broth, bring to a boil.
5. Add beans, pasta, oregano, and basil. Reduce heat and simmer for 15 minutes.
6. Season with salt and pepper to taste.
7. Stir in spinach and cook until wilted, about 2 minutes.
8. Serve hot and enjoy!
