Main Ingredients
- 2 cups Diced Potatoes
- 1 cup Chopped Carrots
- 1 cup Chopped Celery
- 1 can Diced Tomatoes
- 4 cups Vegetable Broth
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Dried Thyme
- 2 tablespoon Olive Oil
1. Heat olive oil in a large pot over medium heat.
2. Add carrots, celery, and potatoes. Cook for 5-7 minutes until they start to soften.
3. Add diced tomatoes, vegetable broth, salt, pepper, and thyme. Stir well.
4. Bring to a boil, then reduce heat and let simmer for 30-35 minutes until vegetables are tender.
5. Serve hot and enjoy!
