Ingredients

  • 2 cups Diced Potatoes
  • 1 cup Chopped Carrots
  • 1 cup Chopped Celery
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme
  • 2 tablespoon Olive Oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add carrots, celery, and potatoes. Cook for 5-7 minutes until they start to soften.
  3. 3. Add diced tomatoes, vegetable broth, salt, pepper, and thyme. Stir well.
  4. 4. Bring to a boil, then reduce heat and let simmer for 30-35 minutes until vegetables are tender.
