Ingredients

  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • ¼ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Almond milk
  • ¼ cup Maple syrup
  • ¼ cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a baking dish.
  2. In a mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix the almond milk, maple syrup, vegetable oil, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until just mixed.
  5. Pour the batter into the prepared baking dish and bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  6. Let cool before serving.
