  • 2 tablespoon maple syrup vegan substitute for honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried thyme

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, maple syrup, salt, pepper, and thyme.
  3. Toss carrots in the mixture until well coated.
  4. Spread carrots on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
