Hungarian Goulash Recipe
A hearty and flavorful vegan Hungarian goulash.

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 large carrots, sliced
- 2 large potatoes, diced
- 1 large red bell pepper, chopped
- 1 large yellow bell pepper, chopped
- 2 cups vegetable broth
- 1 can diced tomatoes
- 2 tablespoon paprika
- 1 teaspoon caraway seeds
- to taste Salt and pepper
- to garnish Fresh parsley, chopped
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until soft.
Add carrots, potatoes, and bell peppers. Cook for 5 minutes.
Stir in paprika and caraway seeds.
Add vegetable broth and diced tomatoes. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, until vegetables are tender.
Season with salt and pepper.
Garnish with fresh parsley before serving.
