Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 large potatoes, diced
  • 1 large red bell pepper, chopped
  • 1 large yellow bell pepper, chopped
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 2 tablespoon paprika
  • 1 teaspoon caraway seeds
  • to taste Salt and pepper
  • to garnish Fresh parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add carrots, potatoes, and bell peppers. Cook for 5 minutes.
  4. Stir in paprika and caraway seeds.
  5. Add vegetable broth and diced tomatoes. Bring to a boil.
  6. Reduce heat and simmer for 30-35 minutes, until vegetables are tender.
  7. Season with salt and pepper.
  8. Garnish with fresh parsley before serving.
