Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 500 g Mushrooms, sliced
  • 2 tablespoon Paprika
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Soy sauce
  • 1 teaspoon Dill
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add sliced mushrooms and cook until they release their moisture and begin to brown, about 10 minutes.
  5. Stir in paprika and cook for another minute.
  6. Add vegetable broth, coconut milk, soy sauce, and dill. Bring to a simmer and cook for 15 minutes.
  7. Season with salt and pepper to taste. Serve hot.
