Main Ingredients
- 2 tablespoon vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 teaspoon ground cumin
- 2 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon chili powder
- 1 teaspoon garam masala
- 1 can diced tomatoes (14 oz)
- 1 can coconut milk (14 oz)
- 1 lb chicken breast, cut into bite-sized pieces
- to taste Salt
- to taste Fresh cilantro, chopped (for garnish)
- Heat oil in a large pot over medium heat. 
- Add onions and cook until golden brown. 
- Stir in garlic and ginger, cook for another minute. 
- Add cumin, coriander, turmeric, chili powder, and garam masala. Cook for 2 minutes. 
- Pour in diced tomatoes and coconut milk. Bring to a simmer. 
- Add chicken pieces and cook until chicken is done, about 20 minutes. 
- Season with salt to taste. 
- Garnish with fresh cilantro before serving.
