Ingredients

  • 1 cup black beans cooked
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1 avocado diced
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro chopped
  • 2 tablespoon lime juice freshly squeezed
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Add black beans and corn to the Instant Pot. Cook on high pressure for 5 minutes.
  2. 2. Quick release the pressure and drain any excess liquid.
  3. 3. In a large bowl, combine the cooked beans and corn with red bell pepper, avocado, red onion, and cilantro.
  4. 4. In a small bowl, whisk together lime juice, cumin, salt, and black pepper. Pour over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
