Ingredients 

Main Ingredients

  • 1 cup dried mixed beans
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions 

  1. Rinse and sort the beans.
  2. Add all ingredients to the Instant Pot.
  3. Set to high pressure for 30 minutes.
  4. Allow natural release for 10 minutes, then quick release.
  5. Season with salt and pepper to taste.
