Ingredients 

Main Ingredients

  • 1 cup Cauliflower florets
  • 1 cup Carrots, diced
  • 1 cup Green beans, chopped
  • 1 cup Coconut milk
  • 1 cup Tomato puree
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 teaspoon Curry powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1 cup Frozen peas

Instructions 

  1. 1. Set the Instant Pot to sauté mode and add a bit of oil. Sauté the onions, garlic, and ginger until soft.
  2. 2. Add the curry powder, garam masala, turmeric, and salt. Stir well.
  3. 3. Add the cauliflower, carrots, green beans, tomato puree, and coconut milk. Stir to combine.
  4. 4. Close the lid and set the Instant Pot to manual high pressure for 5 minutes.
  5. 5. Once done, quick release the pressure. Add the frozen peas and stir. Let it sit for a few minutes before serving.
