Ingredients 

Main Ingredients

  • 1 cup dried red beans rinsed and sorted
  • 1 cup long-grain white rice
  • 1 medium onion diced
  • 1 medium bell pepper diced
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon hot sauce optional

Instructions 

  1. 1. Set the Instant Pot to sauté mode. Add a splash of vegetable broth and sauté the onion, bell pepper, and garlic until softened, about 5 minutes.
  2. 2. Add the dried red beans, rice, remaining vegetable broth, thyme, smoked paprika, salt, black pepper, and hot sauce (if using). Stir to combine.
  3. 3. Secure the lid on the Instant Pot and set it to manual high pressure for 25 minutes.
  4. 4. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  5. 5. Open the lid, stir the mixture, and adjust seasoning if needed. Serve hot.
