Instant Pot Vegetable Broth Recipe
This is a simple and delicious vegan vegetable broth made in an Instant Pot.

Main Ingredients
- 1 large onion quartered
- 2 cloves garlic smashed
- 2 large carrots chopped
- 2 stalks celery chopped
- 1 cup mushrooms sliced
- 1 bunch parsley fresh
- 1 teaspoon salt
- 1 teaspoon pepper
- 8 cups water
1. Add all ingredients to the Instant Pot.
2. Close the lid and set the valve to sealing.
3. Cook on high pressure for 35 minutes.
4. Allow the pressure to release naturally.
5. Strain the broth and discard the solids.
6. Store in the refrigerator for up to a week or freeze for later use.
