Instant Pot Vegetable Soup Recipe
A hearty and healthy vegan vegetable soup made easily in an Instant Pot.

Main Ingredients
- 1 tablespoon Olive oil
- 1 cup Chopped onion
- 2 cloves Garlic, minced
- 2 cups Chopped carrots
- 2 cups Chopped celery
- 2 cups Diced tomatoes canned
- 4 cups Vegetable broth
- 1 cup Green beans, chopped
- 1 teaspoon Dried thyme
- 1 teaspoon Dried basil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 cups Chopped spinach fresh
1. Set the Instant Pot to sauté mode and add olive oil.
2. Add the chopped onion and garlic, sauté until softened.
3. Add the carrots, celery, diced tomatoes, vegetable broth, green beans, thyme, basil, salt, and pepper.
4. Close the lid and set the Instant Pot to manual high pressure for 7 minutes.
5. Once the cooking time is complete, do a quick release of the pressure.
6. Stir in the chopped spinach and let it wilt in the hot soup.
7. Serve hot and enjoy!
