Island Style Sardines and Rice
A delicious and simple island-style dish featuring sardines and rice.

Main Ingredients
- 2 cups Rice uncooked
- 1 can Sardines in tomato sauce
- 1 tablespoon Olive Oil
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
- 2 cups Water
1. Rinse the rice under cold water until the water runs clear.
2. In a pot, bring the 2 cups of water to a boil. Add the rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked.
3. While the rice is cooking, heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
4. Add the sardines (with the tomato sauce) to the pan. Break the sardines into smaller pieces using a spoon. Cook for about 5 minutes, stirring occasionally.
5. Season with salt and black pepper to taste.
6. Serve the sardines over the cooked rice. Enjoy!
