  • 1 cup Chopped Vegetables Mixed (bell peppers, zucchini, eggplant)
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Freshly ground
  • 1 teaspoon Dried Oregano

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a saucepan, heat the olive oil over medium heat.
  3. 3. Add the chopped vegetables and sauté until tender, about 5-7 minutes.
  4. 4. Stir in the tomato sauce, salt, black pepper, and dried oregano. Simmer for 10 minutes.
  5. 5. Transfer the mixture to a baking dish and bake in the preheated oven for 20 minutes.
