Italian Herb Veggie Packets Recipe

Main Ingredients
- 2 cups Zucchini, sliced
- 2 cups Bell Peppers, sliced
- 1 cup Cherry Tomatoes, halved
- 1 cup Red Onion, sliced
- 2 tablespoon Olive Oil
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- 1 teaspoon Garlic Powder
- to taste Salt and Pepper
Preheat your oven to 400°F (200°C).
Cut 4 large pieces of aluminum foil.
In a large bowl, combine all the vegetables, olive oil, and seasonings. Toss to coat.
Divide the vegetable mixture evenly among the foil pieces. Fold the foil over the vegetables and seal the edges to create packets.
Place the packets on a baking sheet and bake for 25 minutes.
Carefully open the packets and serve hot.
