Ingredients 

Main Ingredients

  • 1 can Jackfruit drained and rinsed
  • 1 tablespoon Olive oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 2 tablespoon Curry powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 can Coconut milk
  • 1 cup Vegetable broth
  • 1 cup Diced tomatoes canned
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and sauté until translucent.
  3. 3. Stir in the garlic and ginger, cooking for another minute.
  4. 4. Add the curry powder, turmeric, and cumin, stirring to coat the onions.
  5. 5. Pour in the coconut milk, vegetable broth, and diced tomatoes. Bring to a simmer.
  6. 6. Add the jackfruit, salt, and pepper. Simmer for 20 minutes, stirring occasionally.
  7. 7. Garnish with chopped cilantro before serving.
