  • 2 large cucumbers thinly sliced
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds toasted

Instructions 

  1. 1. Thinly slice the cucumbers and place them in a mixing bowl.
  2. 2. Sprinkle the salt over the cucumbers and let them sit for 10 minutes. Then, drain any excess water.
  3. 3. In a small bowl, mix the rice vinegar, sugar, soy sauce, and sesame oil.
  4. 4. Pour the dressing over the cucumbers and toss to coat evenly.
  5. 5. Sprinkle the toasted sesame seeds on top before serving.
