Ingredients

  • 4 cups vegetable broth
  • 1 cup shiitake mushrooms sliced
  • 1 cup tofu cubed
  • 1 cup bok choy chopped
  • 2 tablespoon soy sauce
  • 1 tablespoon miso paste
  • 1 teaspoon ginger grated
  • 2 cloves garlic minced
  • 2 green onions green onions chopped
  • 1 sheet nori cut into strips

Instructions 

  1. Heat vegetable broth in a pot over medium heat.
  2. Add mushrooms, tofu, bok choy, soy sauce, miso paste, ginger, and garlic.
  3. Simmer for 15 minutes.
  4. Serve hot, garnished with green onions and nori strips.
