- 4 cups kale, finely chopped
- 2 apples, thinly sliced
- ¼ cup red onion, thinly sliced
- ¼ cup sunflower seeds
- ¼ cup dried cranberries
- ¼ cup olive oil
- 2 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
- Salt and pepper to taste
In a large bowl, combine kale, apples, red onion, sunflower seeds, and dried cranberries.
In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, salt, and pepper.
Pour dressing over the salad and toss to combine.
Let sit for 10 minutes before serving to allow flavors to meld.
