Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 bunch Kale, chopped
  • 1 can Coconut milk
  • 4 cups Vegetable broth
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add chopped onion and minced garlic. Sauté until translucent.
  3. 3. Add chopped kale and cook until wilted.
  4. 4. Pour in coconut milk and vegetable broth. Bring to a boil.
  5. 5. Reduce heat and simmer for 15 minutes.
  6. 6. Use a blender to puree the soup until smooth.
  7. 7. Season with salt and black pepper to taste.
