Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 4 cups kale chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. Cook the quinoa: In a pot, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  2. 2. Prepare the kale: While the quinoa is cooking, chop the kale and place it in a large mixing bowl.
  3. 3. Add the remaining ingredients: Add the cherry tomatoes, cucumber, red onion, olive oil, lemon juice, salt, and black pepper to the bowl with the kale.
  4. 4. Combine: Add the cooked quinoa to the bowl and toss everything together until well combined.
  5. 5. Serve: Serve immediately or refrigerate for later. Enjoy!
