Ingredients 

Main Ingredients

  • 1 bunch Kale finely chopped
  • 1 cup Carrots shredded
  • 1 cup Red Cabbage shredded
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Dijon Mustard
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste

Instructions 

  1. 1. In a large mixing bowl, combine the chopped kale, shredded carrots, and shredded red cabbage.
  2. 2. In a small bowl, whisk together the olive oil, lemon juice, maple syrup, Dijon mustard, salt, and black pepper.
  3. 3. Pour the dressing over the kale mixture and toss well to combine.
  4. 4. Let the slaw sit for at least 10 minutes before serving to allow the flavors to meld.
