Ingredients 

Main Ingredients

  • 2 links Vegan kielbasa sliced
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 large Bell pepper chopped
  • 2 cups Baby spinach
  • 1 cup Cherry tomatoes halved
  • 2 tablespoon Olive oil
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the sliced vegan kielbasa and cook until browned, about 5 minutes.
  5. Add the chopped bell pepper and cook for another 3-4 minutes.
  6. Stir in the baby spinach and cherry tomatoes, and cook until the spinach is wilted.
  7. Season with smoked paprika, salt, and black pepper. Serve hot.
