Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 4 cups vegetable broth
  • 1 cup sliced mushrooms
  • 1 cup cubed tofu
  • 2 cups chopped spinach
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions 

  1. Heat vegetable oil in a pot over medium heat. Add onion and garlic, sauté until soft.
  2. Stir in gochujang and soy sauce, cook for another minute.
  3. Pour in vegetable broth, bring to a boil.
  4. Add mushrooms and tofu, simmer for 15 minutes.
  5. Stir in spinach and sesame oil, cook for another 5 minutes.
  6. Season with salt and pepper to taste.
