Main Ingredients
- 2 tablespoon Vegetable oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 inch Ginger, grated
- 1 cup Coconut milk
- 1 cup Vegetable broth
- 2 cups Mixed vegetables (carrots, peas, potatoes)
- 1 teaspoon Turmeric powder
- 1 teaspoon Cumin powder
- 1 teaspoon Coriander powder
- 1 teaspoon Garam masala
- to taste Salt
- to taste Black pepper
- ¼ cup Cashews, soaked and blended
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onion and sauté until golden brown.
3. Stir in the garlic and ginger, cooking for another minute.
4. Add the turmeric, cumin, coriander, and garam masala. Cook for 2 minutes.
5. Pour in the coconut milk and vegetable broth, bringing to a simmer.
6. Add the mixed vegetables and cook until tender, about 15-20 minutes.
7. Stir in the blended cashews, salt, and pepper. Simmer for another 5 minutes.
8. Serve hot with rice or naan.
