Ingredients 

Main Ingredients

  • 2 leeks cleaned and sliced
  • 0.5 cup almonds chopped
  • 2 tablespoon olive oil
  • 3 cloves garlic minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 12 oz pasta
  • 0.25 cup nutritional yeast
  • 2 cups vegetable broth
  • 1 lemon zested and juiced
  • Fresh parsley chopped (for garnish)

Instructions 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add leeks and garlic, cook until softened.
  3. Add almonds, salt, and pepper. Cook for another 5 minutes.
  4. Pour in vegetable broth, bring to a simmer. Add nutritional yeast, lemon zest, and juice.
  5. Toss in cooked pasta, mix well. Garnish with fresh parsley before serving.
