Ingredients 

Crust

  • 1 cup all-purpose flour
  • ¼ cup powdered sugar
  • ½ cup vegan butter, melted

Filling

  • 1 cup granulated sugar
  • ¼ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ cup lemon juice
  • 1 tablespoon lemon zest
  • ¼ cup coconut milk

Instructions 

  1. Preheat oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  2. In a bowl, mix flour and powdered sugar. Add melted vegan butter and combine until crumbly. Press into the baking dish.
  3. Bake for 15 minutes or until lightly golden.
  4. In another bowl, mix sugar, flour, and baking powder. Add lemon juice, lemon zest, and coconut milk. Whisk until smooth.
  5. Pour filling over the baked crust. Bake for another 20 minutes.
  6. Let cool completely before cutting into bars.
