Lemon Basil Chicken Bowls Recipe

Main Ingredients
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 0.25 cup red onion, diced
- 0.25 cup fresh basil, chopped
- 0.25 cup fresh parsley, chopped
- 0.25 cup lemon juice
- 2 tablespoon olive oil
- Salt and pepper to taste
Cook quinoa according to package instructions.
In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, basil, and parsley.
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
Pour the dressing over the quinoa mixture and toss to combine.
Serve immediately or refrigerate for later.
