Ingredients 

Main Ingredients

  • 1 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • cup vegetable oil
  • ¼ cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix almond milk and apple cider vinegar. Let sit for 5 minutes.
  3. In a bowl, combine flour, sugar, baking powder, baking soda, and salt.
  4. Add oil, lemon juice, lemon zest, and vanilla extract to the almond milk mixture. Mix well.
  5. Pour wet ingredients into dry ingredients. Stir until just combined.
  6. Fold in blueberries.
  7. Pour batter into the loaf pan. Bake for 50 minutes or until a toothpick comes out clean.
  8. Let cool before slicing.
