Ingredients

  • 1 cup Orzo
  • 1 Lemon juiced and zested
  • 4 cups Vegetable Broth
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 1 cup Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Parsley chopped

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onions, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. 3. Add the garlic and cook for another minute.
  4. 4. Pour in the vegetable broth and bring to a boil.
  5. 5. Add the orzo and cook until tender, about 8-10 minutes.
  6. 6. Stir in the lemon juice, lemon zest, salt, and pepper.
  7. 7. Remove from heat and stir in the fresh parsley.
  8. 8. Serve hot and enjoy!
