Ingredients 

Base

  • 1 cup All-purpose flour
  • ¼ cup Coconut oil, melted
  • ¼ cup Maple syrup
  • 1 teaspoon Vanilla extract

Filling

  • 1 cup Coconut milk full-fat
  • ½ cup Lemon juice freshly squeezed
  • ½ cup Maple syrup
  • 2 tablespoon Cornstarch
  • 1 tablespoon Lemon zest

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a baking pan.
  2. In a mixing bowl, combine flour, melted coconut oil, maple syrup, and vanilla extract. Press the mixture into the baking pan to form the base.
  3. Bake the base for 10 minutes, then remove from the oven.
  4. In another bowl, whisk together coconut milk, lemon juice, maple syrup, cornstarch, and lemon zest until smooth.
  5. Pour the filling over the baked base and return to the oven. Bake for another 15 minutes or until set.
  6. Let it cool completely before cutting into bars. Enjoy!
