Lemon Curd Parfait
A delicious vegan lemon curd parfait that's perfect for any occasion.

Lemon Curd
- 1 cup Lemon juice freshly squeezed
- ½ cup Coconut milk full-fat
- ½ cup Maple syrup
- 2 tablespoons Cornstarch mixed with 2 tablespoon water
- 1 teaspoon Vanilla extract
Parfait Assembly
- 1 cup Granola
- 1 cup Fresh berries mixed
In a saucepan, combine lemon juice, coconut milk, and maple syrup. Heat over medium heat until it starts to simmer.
Whisk in the cornstarch mixture and cook until the curd thickens, about 5-7 minutes. Remove from heat and stir in vanilla extract. Let it cool.
In parfait glasses, layer granola, lemon curd, and fresh berries. Repeat layers as desired.
Serve immediately or refrigerate for later.
