Ingredients

  • 1 cup Lemon juice freshly squeezed
  • 1 cup Sugar
  • 2 tablespoon Cornstarch
  • 1 cup Coconut milk full-fat
  • 1 tablespoon Lemon zest finely grated
  • 1 teaspoon Turmeric for color

Instructions 

  1. In a saucepan, combine lemon juice, sugar, and cornstarch. Whisk until smooth.
  2. Add coconut milk, lemon zest, and turmeric. Whisk to combine.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  4. Reduce heat and simmer for 1-2 minutes, continuing to stir.
  5. Remove from heat and let cool. Transfer to a bowl and refrigerate until set.
