Ingredients

  • 12 oz vegan shrimp
  • 8 oz spaghetti
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 lemon, juiced and zested
  • 1 teaspoon red pepper flakes
  • to taste salt and pepper
  • 2 tablespoon fresh parsley, chopped

Instructions 

  1. 1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. 2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until fragrant.
  3. 3. Add the vegan shrimp to the pan and cook for about 3-4 minutes until heated through.
  4. 4. Add the cooked spaghetti to the pan, along with the lemon juice, lemon zest, salt, and pepper. Toss to combine.
  5. 5. Garnish with fresh parsley and serve immediately.
