Instructions
1. Cook quinoa: In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
2. Prepare tofu: In a pan, heat olive oil over medium heat. Add tofu and cook until golden brown.
3. Add garlic: Add minced garlic to the pan and cook for 2 minutes.
4. Combine: Add cooked quinoa to the pan with tofu. Stir in lemon juice, zest, salt, and pepper.
5. Garnish: Sprinkle with fresh parsley before serving.
