Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 1.5 cups Water
  • 1 block Tofu firm, drained and cubed
  • 2 tablespoon Olive Oil
  • 3 cloves Garlic minced
  • 1 Lemon juiced and zested
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley chopped

Instructions 

  1. 1. Cook quinoa: In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  2. 2. Prepare tofu: In a pan, heat olive oil over medium heat. Add tofu and cook until golden brown.
  3. 3. Add garlic: Add minced garlic to the pan and cook for 2 minutes.
  4. 4. Combine: Add cooked quinoa to the pan with tofu. Stir in lemon juice, zest, salt, and pepper.
  5. 5. Garnish: Sprinkle with fresh parsley before serving.
