- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 cup sliced bell peppers
- 1 cup cherry tomatoes
- 4 cloves garlic, minced
- 1 lemon, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Preheat oven to 400°F (200°C).
In a large bowl, combine all vegetables, garlic, lemon juice, olive oil, salt, and pepper.
Divide the mixture evenly among four large pieces of aluminum foil.
Fold the foil over the vegetables and seal the edges to create packets.
Place the packets on a baking sheet and bake for 25 minutes.
Carefully open the packets and serve.
