Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 1 lemon, juiced
  • 2 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • to taste salt and pepper

Instructions 

  1. 1. In a saucepan, bring water to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. 2. Fluff the couscous with a fork and transfer to a mixing bowl.
  3. 3. Add lemon juice, olive oil, cherry tomatoes, cucumber, red onion, parsley, and mint to the couscous. Mix well.
  4. 4. Season with salt and pepper to taste. Serve chilled or at room temperature.
